Vegetarian Potato Gratin/Scalloped Potatoes
Since I had leftover from the 1kg of baby potatoes, I went around looking for potato recipes haha.
And I stumbled upon this recipe from

Okay. So my pictures don't look nice but it tastes good. Hahaha.
Changed the recipe a little and this is what I did.
Ingredients:
- 6 baby potatoes, sliced thinly
- 125ml milk and 75g greek yogurt
- 1 cup of shredded cheese* about 90g
- 5 pieces of broccoli (plucked from the original stem)
- Salt to preference
*I used Emborg shredded cheese - cheddar 200g from fairprice which cost $6.80
Directions:
1. Place thinly sliced potatoes across the pot, then add salt (to your preference) over the potatoes. Cover the potatoes with milk and yogurt and then simmer for about 15-20 minutes till fork tender. (Mine took about 15 minutes!)
2. Place broccoli in a separate pot. (My brocolli took quite long to boil. So I suggest boiling this first) Leave it in the pot for 1.5 to 2 minutes after the water starts boiling, then drain.
3. Add cheddar cheese to the pot with potatoes. Mix it slightly. Wait until it melts and it's ready to serve. (Mine took about 5 min for the cheese to melt.)
4. For presentation, place potatoes on the plate and broccoli at the side.
I've already started eating my potatoes so didn't do any presentation for the dish to take a nicer picture, hahaha.
Anyway, my mom likes this! And my picky brother said it's okay to eat more. Hahaha.
Oh, and broccoli tastes really nice when you boil it!! Anyway broccoli is optional. Any vegetable can be used.
