Potato + mushroom + cheese

I've come up with a simplest recipe to date. LOL.

All it involves is one microwave-safe plate and one microwave!

Perfect for lazy people like me, hahahah.

Ingredients

^I used a mix of cheddar and mozzarella.

Instructions:
1. Wash the potatoes.
2. Chop off the sides of the potatoes, then halve them. (Chop it in the middle between the ends you've cut the sides of so that they can stand haha. I cut off the wrong side for one of the potato, so it can't 'stand' by itself.)
3. Coat or lightly brush them with olive oil, and season with salt and pepper.
4. Place potatoes on your microwave-safe plate, at medium heat for 5 minutes.
5. Turn over the potatoes to cook the other side, place them into the microwave again for 5 minutes at medium heat.
6. Use a fork to check if they are cooked. If the fork is able to pierce through the potato easily, it is cooked. If they aren't, place them back into the microwave at intervals of 1 min.*
7. If you just want to eat baked potatoes, you're done.
For the add on, place toppings of your choice (I added mushrooms, stir-fried on a separate pan as I waited for my potato to be tender) and cheese. Microwave for 30-60 seconds at medium heat for the cheese to melt.

*read somewhere that if the potato is overcooked, the microwave will explode. o_o better be safe than sorry.

I had the potatoes with their skin on! It's much crispier, and I read before that the nutrients of potatoes are actually on their skin, haha.



Made mixed vegetable croquette yesterday. Followed ochikeron's recipe, lol. Ran out of panko at the fifth croquette. HAHAHA.
