Vegetarian Potato Gratin/Scalloped Potatoes

Since I had leftover from the 1kg of baby potatoes, I went around looking for potato recipes haha.
And I stumbled upon this recipe from

Made this for lunch!!
Okay. So my pictures don't look nice but it tastes good. Hahaha.

Changed the recipe a little and this is what I did.

Ingredients:


*I used Emborg shredded cheese - cheddar 200g from fairprice which cost $6.80

Directions:
1. Place thinly sliced potatoes across the pot, then add salt (to your preference) over the potatoes. Cover the potatoes with milk and yogurt and then simmer for about 15-20 minutes till fork tender. (Mine took about 15 minutes!)

2. Place broccoli in a separate pot. (My brocolli took quite long to boil. So I suggest boiling this first) Leave it in the pot for 1.5 to 2 minutes after the water starts boiling, then drain.
3. Add cheddar cheese to the pot with potatoes. Mix it slightly. Wait until it melts and it's ready to serve. (Mine took about 5 min for the cheese to melt.)
4. For presentation, place potatoes on the plate and broccoli at the side.

I've already started eating my potatoes so didn't do any presentation for the dish to take a nicer picture, hahaha.

Anyway, my mom likes this! And my picky brother said it's okay to eat more. Hahaha.
Oh, and broccoli tastes really nice when you boil it!! Anyway broccoli is optional. Any vegetable can be used.

Potato Salad

So I made potato salad today!!

Had potato salad the other day at Starbucks and I loved the taste so I decided to try. Haha.

The one I had today doesn't taste like Starbucks one. Haha. But it's okay.

I feel like it's a much healthier option.

Idk if it's only me, but when I see lots of oil eg butter, or sugar in recipes I won't feel like eating it.

The original recipe I followed is over here.

I modified the recipe a little since my mom doesn't eat eggs.


Ingredients:

  • 10 brown baby potatoes (I wanted to get the red one but it's not available in the supermarket)
  • 50g carrots, chopped
  • Greek yogurt (I just added till I saw all the food are covered haha)
  • 10 baby tomatoes, halved
  • Parsley
  • Salt and pepper to taste

Directions:

1.Cut potatoes into quarters and put into a medium pot. Add enough cold water to the pot to cover the potatoes by an inch or so. Bring to a boil over high heat and simmer until the potatoes are fork tender (about 5 more minutes after boiling).

2. While waiting for the potato to boil, bring carrots to a boil.

3. Place potatoes in a large bowl and add carrots, yogurt, salt and pepper. Stir until everything is mixed well.

Idk how many servings they will make since I had this for dinner.
And greek yogurt actually tastes nice!! Haha.




Anyway, I found a post that tastes like Starbuck's potato salad!!
Shall try next time.

And yupp, as you can see from my recent bomb of homemade food on instagram, I've got a new hobby - cooking/baking. Lol.

Just did stats prelim today.
I think I'll get probably 20 marks lol. ㅜㅜ

At least it shows what areas I don't know and am not sure of haha.

So I painted my nails yesterday!!
They look better after watching youtube nail tutorials hahahahah. I think this current design is the best I've ever drawn lol.
Btw, happy chinese new year!
It's another year and I have grown older.
Prelim is next week and I'm not productive at all. :(
